The Best Gluten Free Strawberry Banana Smoothie Bowl
Jamba Juice: You love it, your wallet is lighter because of it, and your hubby…well it’s a toss up which causes him more anxiety, daily runs to get one of these delicious little smoothies or when you leave to Target with no kids and his credit card.
Now I must confess, in my pre-marriage days and having nothing more to spend my money on then tanning, clothes, and fun; I may or may not have been known by name and smoothie order by every employee at the Jamba Juice counter. Then I grew up, got married to my hubby, bought a house, and decided to have a small army of children (don’t get me wrong, they are are cute and I love them more than anything but they definitely suck me dry) and suddenly Jamba Juice was the last thing I could afford to have taking zeros off of my bank statement.
If my situation sounds familiar (first of all, I am so glad we have something in common) don’t worry, I have recipe that will leave you and your family saying Jamba who? This smoothie bowl is not only simple to make, it easy on the wallet, and tastes just like Jamba Juice. Who said you can’t have your cake and eat it too?
Making this smoothie is quick and easy, just remember to slice up two bananas, place them in a freezer bag, and place them in the freezer the night before so they are nice and cold in the morning. Once your bananas are frozen simply place them in a blender along with frozen strawberries, peanut butter, vanilla almond milk, and gluten free vanilla yogurt (you can also use a dairy free option such as coconut or almond milk yogurt).
Blend all of the ingredients together until they are smooth and then poor into a medium sized cereal bowl. If you want a slightly smaller serving (although once you taste this smoothie bowl you will quickly realize asking for a small bowl was a mistake) pour the mixture into three small child-sized bowls. Top with crushed vanilla Chex and extra banana slices, serve immediately, and enjoy!
Prep Time: 5 Minutes Total Time: 10 Minutes
-1 1/2 sliced frozen bananas, sliced
-1-1 1/2 cups frozen strawberries
-2 tablespoons peanut butter
-1/2 cup almond milk (unsweetened vanilla or plain would work)
-1/2 cup gluten free vanilla yogurt (can use dairy free yogurt as well)
-1/2 cup vanilla Chex, crushed
-1/2 banana sliced
Place frozen strawberries, frozen banana slices, peanut butter, vanilla almond milk, and vanilla yogurt in blender and blend until smooth. Pour smoothie into a medium sized cereal bowl (or if using small child sized bowls it would make about three servings). Place banana slices on top, sprinkle with crushed vanilla Chex, and serve immediately.
